Lotsa rice flour

I picked up about 30lb of rice flour at the state fair today. I use some for dusting under bread and pizza, but what else is it good for?

Larry,

I use it to make a batter for fried fish when I do fish 'n chips. It's a really nice light and crispy version.

I am forced to use it in a lot of baking, but I certainly wouldn't recommend it for that.

I'd love to hear what others use it for!

We have used it whenever "flour" is called for in an oriental recipe.

I use it for thickening sauces. Takes a little longer than other starches but gives a great texture. Plus it has a lower glycemic index that wheat flour.

What Stuart said regarding Chinese dumpling dough.

And mixed 1/3 rice flour with 2/3 ground soaked urad dal, it's the recipe for dosas (Indian crepes).

You can make your own Chinese rice noodles (fun), too.
