Nice Dinner Tonight

I had dinner with my son at my Mother's house tonight. She gets a lot of veggies from a local organic farm and centers her meals around these. She cooks simple (most of the time) and always good food.

Roasted Chicken stuffed with Lemon and Basil

Squash, Corn, Onion, Tomato, and Parmesan Gratin

Mashed Potatoes

Salad of Baby Spinach, Mixed Lettuces, English Cucumbers, Red Onions, Kalamata Olives, and Citrus Vinaigrette

Baked Apples stuffed with Walnuts and Dried Cherries

2007 Vintage Austin Tap Water

I always need a good Burgundy. But I have to say that food like this is just great. It is not heavily flavored so the natural taste come through and blends well with everything else. There was just real comfort at the table tonight (Mom seems to be good at that).

She also does a really nice presentation. Tonight was not extravagant but the table just looked nice. Not only did it all taste good but the look contributed to the overall feel of the meal. My Mom just plain rocks!

I get all that from your original post. That's why I thought a nice Burgundy would have really made the meal. I guess MOM needs nothing more.

PS. Dinner sounds fantastic too. There was warm and comforting in just READING your menu...

Actually James, I don't drink anymore (other than the occasional taste should a really really nice bottle come along) so Mom stands in solidarity on occasion. But she had a nice Adelsheim Pinot on hand that she and her hubby were nursing last night.

Robert, your Mom rocks, all Moms rock if they are real Moms. Of course our own Mom rocks best. Mother (and all diminutives thereof) is the only word that I insist be in CAPS regardless how it is used.
