autumn green tomatoes

The weather has finally changed to autumn in the Finger Lakes. We still have a ton of tomatoes on vines, so tonight I plan to try my hand at fried green tomatoes...dusted with flour and corn meal, fried in bacon fat and garlic/cayenne.

Do you think it will work?

I fried some slices last week in olive oil that had soaked with some smashed garlic for a couple of days.

To paraphrase Arthur, it didn't suck.

It turned out great.

I cooked up some catfish filets in cornmeal and cayenne, the green tomatoes plus a concoction of leftover white beans with barley, to which I added olives, chopped red pepper, turmeric, and simmered in some stock then served over sauteed collard greens with tons of garlic.

Nice dinner with a light Spanish Garnacha, the name of which I do not have in front of me.

What a complex combination, sounds great. And, not that there's any reason to substitute anything for barley, but your dish would be quite successful with grits, too.
