What do you do with kaffir lime leaves ?

I brought the kaffir lime plant indoors this weekend - getting into the high 30's at night here. It has gone wild and needs to be pruned. Looking for uses and ways to preserve. It is an amazingly vigorous plant.

It's a staple in Thai cooking. A stock is incomplete without it and it's integral to curry paste.

My tree got very large and grew huge spikes from the limbs. I was afraid one of the animals was going to poke their eye out, so I removed it. But I did use the leaves in cooking. I wonder if you can dry the leaves like bay leaves are dried?

Yes, the leaves can be dried like bay, they can also be frozen. The limes themselves, which don't give off much juice of any value, can be thinly sliced and also used as a flavoring in soups. As stated by Stuart, they are indispensable in Thai cooking. Kasma loha-unchit has extensive information about the tree, the leaves and the fruits in her book It Rains Fishes. Enjoy.

As mentioned, they're a staple of Thai cooking--both the kaffir lime leaves and the zest of the fruit. The leaves freeze well.

A couple of recipes that use kaffir lime leaves are:

Tom Kha Gai (Galangal Coconut Soup with Chicken)

and

Thai Curry Pastes
