RCP: Lemon Rosemary Salmon

A fast, easy, and great tasting way to prepare salmon from a recipe on the allrecipes.com website ...

1 Large lemon, sliced thinly
4 Sprigs fresh rosemary
2 Salmon fillets, skin removed
Coarse salt to taste
Olive oil

Preheat oven to 400 degrees ... thinly slice the lemon so that the cartwheels would cover both pieces of salmon on both the top and the bottom of the fillets ... arrange half the lemon slices in a single layer in a baking dish ... layer the lemons with two sprigs of rosemary ... place the salmon fillets over the rosemary and lemon cartwheels ... sprinkle the salmon with the salt ... place the remaining two sprigs of rosemary over the salted fillets ... top the rosemary topped fillets with the remaining lemon cartwheels ... drizzle with olive oil ... bake approximately 20 minutes or until the fillets are easily flaked with a fork ...

Serves 2

Went especially well with a bottle of the 2006 Crossings Pinot Noir Awatere Valley New Zealand ...

that is Bill's website, and I agree it is a great website. Looking at it though reminds me AGAIN, that need to get a package of to Bill at said website address. OOPS, Carrie I thought you were speaking of this :-)

Bob, you made me take a second look. I'm glad you pointed out Bill's website--it's great also, and will come in handly now that we have a "productive" Eureka lemon tree right off our kitchen door. Bill actually helped me decide which type to get a few years back. Remember Bill? Probably not. :)

Bill,
I never thought of matching rosemary to salmon. How interesting.
Have you ever thought of using lemon thyme? It has a delicately citrussiness that adds to the herb's distinctive savoury earthiness. I love thyme and salmon and pinot noir together but the lemon thyme is definitely my favourite.

I'm thinking of using the recipe you have posted. Substituting sprigs of lemon thyme for sprigs of rosemary.
