I looked in vain for Vietnamese cinnamon several months ago. Now, McCormick has come out with Saigon cinnamon (not cheap). Waddaya think?

Don't know about McCormick's. We use Penzey's, and their Vietnamese cinnamon is absolutely amazing stuff. Given that what we've bought from Penzey's has always been of very high quality, I'd probably go with theirs rather than risk spending the money on the McCormick's version.

Penzey's offers several other types of cinnamon as well.

We have used Penseys' too. We use it sparingly for special things. We use more of their Korintje Cassia which is more like "regular" cinnamon. We use more because almost daily we sprinkle it into our morning oatmeal.

Go with Penzey's. Be sure to use a lot less than you think you need. It is totally different and takes some trial and error to figure out where it shines best. I do not think it substitutes well for every cinnamon usage though.
