Tre Wilcox did another class tonight. That means more food porn.

I'm assuming here that you can poach lobster and then chop it.

I'm assuming as well that you can make risotto and toss black truffles and truffle oil into it.

Once again I am assuming that you can melt butter with Meyer lemon juice, cook it until it browns, and then throw some pomegranate seed into it.

Yet again I am assuming that you can salt to taste.

Yes, it's really pretty simple.

I was thinking more of the flavors than the prep. It just seems... busy. But take that with a grain of Malden- I've been on a simplicity kick for a couple years now. I used to cook stuff like that, but these days, I'd be more likely to use these elements in separate dishes.

True. There are a lot of flavors at play. But Tre is good at that. I'm like you, though. I've been doing simpler things of late. Still, it's fun food to cook and eat.

Kobe, or Texas Wagyu? No offense, but it bugs me when eateries advertise the one as the other ... and true Japanese Kobe is mighty rare in the U.S. ...

Unlike Stuart, I love the complex suite of different flavors on the plate as long as they work. I love that every bite has the opportunity to offer me different shadings. I would never get bored with a plate like that. Pass the lobster risotto, would you?

This drives me batty, too. I tell people that if they are going to use the term Kobe on their menus, at least qualify it by calling it "Kobe Style."
But do they listen? noooooooooooooo

As it's become so common now, I'm afraid we're fighting yet another losing battle. (variety vs varietal, anyone?)

To the best of my knowledge it was real Kobe. But, in all honesty, I am not sure. I haven't been eating much beef of late so I didn't taste these.

Fair enough ... we won't pick on you further.

Wagyu is great stuff in its own right, but I'm with John on this ... there's an awful lot of mis-labeling going on around the country, and I've zapped a number of places here in reviews for doing it. I think I've pretty much got the practice stamped out in Louisville. ;)

Oh, I don't feel picked on. I am in total agreement with you. But like I said, since I wasn't eating the dish I didn't really care. As unprofessional as that may sound, I just have bigger fish to fry right now.

A big hint would have been if it cost around $50 per lb.
The serving in your picture would have menu'd out at about $150.

And that was EXACTLY what it cost. I remember because we had some left over that did not get cooked and we were trying to find a restaurant in town to buy it from us. So I guess that it was real Kobe.

But I think that $150 would be a little high. Tre probably would have set the price around $60. That is only about 4 ounces on the plate.
