Anise Biscotti

Cindy's recipe, which I stole while she was sleeping....

Makes 2 batches

3 1/4 cups flour
2 1/2 Tblsp baking powder
pinch of salt
6 eggs
1 cup sugar
1 bottle anise extract
5 Tblsp room temp butter
1 cup toasted almonds

Sift together the flour, baking powder and salt
Whip the eggs until blended, then add the sugar, butter, and anise extract. Mix well.
Add the egg mixture to the flour mixture.
Add the almonds. Mix.

On a floured board, put 1/2 the batter. Top batter with flour, and use flour on hands to shape into a loaf about 12" long and 3 or 4" wide.
Bake on ungreased cookie sheet at 350 F about 20 minutes. Test for doneness.

Cut loaf into individual cookies and put back on cookie sheet flat. Back in oven for 6 to 8 minutes per side until golden brown.

There you go.
