The duck was a roasted breast stuffed with crab and avocado and served with an orange brandy sauce. It was garnished with orange slices coated with brown sugar and caramelized in duck fat. We also put some duck 'cracklins' on the plate.

Wow sounds delicious. OK, I know I'm being dense but how do you stuff a duck breast. And the picture looks like 4 sausages. I'm so confused... :? The only reason I'm bugging you about this is that duck is one of my favorite food groups and this looks sooo nice.

LOL! The "sausages" are actually potatoes. The duck breast is under the orange slice.

We took the skin off of the breast and then quickly sauteed the breast. At this point we took a very sharp knife and made an incision into the side of the breast. The filling was put into a piping bag and we just squeezed some of the filling into the hole we had made in the breast. The breasts were finished in the oven.

Some of the filling will come out when you bake it. This is o.k. If you serve the (half) breast whole then it makes for nice presentation. If you cut the breast in half then you can just gently stuff the filling back in.

Here is a picture of the stuffed breasts before they were baked. Hopefully you will get a clearer idea from this.
