I made some fudge today at work. I used Scharffenberger unsweetened, Valrhona Caribe bittersweet, Callebaut bittersweet, and El Rey Bucare 53% (we had a bunch of chocolate laying around). A little cream, sweetened condensed milk, vanilla, and POOF! Hardcore Chocolate Fudge. But it was not hardcore enough for me so I topped it with a layer of Valrhona pot de creme and let it set up. Zit city.

I had a chocolate craving yesterday too. Made double choc brownies ! Your fudge sounds fantastic - we don't get Scharffenberger here, but I've heard great things about it.
