RCP: Tater Tot casserole

Right up front, this is NOT high cuisine! It does, however make for a quick, very tasty, and easy supper, when you are just too frazzled from dealing with kids, idiots at work, idiot drivers, etc to want to make a real meal.

1 pound ground beef
1 medium onion, finely chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1 can English peas & carrots
1 cup shredded cheddar (I confess, Kraft Singles work well too, or even Velveeta)
1 bag Tater Tots

Preheat oven to 425.

Brown the meat and onions; drain. In a 13x9 Pyrex casserole, mix the meat & onion with the contents of the cans; spread evenly. Salt and pepper to taste (add some hot sauce too, if you like - it's your casserole). Top with the cheese, then with the Tater Tots. Bake until top is browned. :mrgreen:

Robert, Tater Tots and tinned soup I can handle, but Kraft Singles ? Never again after my son, then aged 2, would eat nothing else for six months, after getting his first taste of them at a friend's place.

I have to thank you for the idea, though - I think you could Tater Tot Top a lot of dishes, much in the same way I now use Jo Ann's cornbread, or the way we put mash potatoes on a shepherd's pie.

I'm okay with every part of that except the canned peas. EWWWWWWWWWW!
