My reheated Cheese Fondue keeps splitting!!

So is it possible to reheat my cheese fondue mix. Everytime I try to reheat it, it splits. Do I have to make it fresh from scratch?

I've been successful by reheating slowly in a double boiler and whisking in some warmed liquid during the heating. Use more of the the original liquid used, in my case that always means wine. But it doesn't always work. It seems to depend on what kind of, and how much, cheese I used... and maybe the position of the planets. 8)

It's like trying to rekindle an old relationship. Too many bad memories from the first time around - on the part of the fondue.

Try talking nice to it, maybe it won't split next time.

Try very low heat setting on your microwave -- check every minute or so. No guarantees -- but it sometimes works. Good luck.

Bob, your question is right on time. Liz and I made fondue yesterday, most likely for the last time until fall. I made extra since our 14 year old is starting to appreciate it more. Well of course she didn't eat too much of it as she was happy with some beef filet from Sat., so I'll be reheating what's left tonight.

I've had some luck by adding alcohol to the mix, e.g. 2 ounces of Kirsch, Aquavit, or Kümmel (= schnapps made from cumin and great with Emmenthaler or Gruyère), and reheating slowly on the stovetop. If you add 2 ounces of each, you won't care if the mixture splits.
And now what?
