So, are the beans in cassoulet the star or not? It wouldn't be the same dish without the various meats that go in it. FWIW, I voted for "most of the time" as I rarely use beans as a side dish, though Stuart's mention of hummous does give me pause. And, like Robin, when I go meatless (6-8 times per week I'd guess) beans are usually the central player in the meal... except when they're not :P

This sequence of messages has me imagining a "Texas Cassoulet"

I suppose it would be a pile of meats, duck and sausage etc., with a few herbs and spices and duck fat, simmered into a tender goop.

Probably that's what RWJ would prefer, right? Sans legumes.

It's a good thing Cassoulet belongs to the French...

As I understand it, Poisson distribution works better if there are also Baguettes.

You can feed a huge crowd with only a little food that way.
