This classic from Switzerland is a wonderful partner for all meat dishes........

Yes Celia, as you see the link is not shown completely. Maybe because of the "ö". I don´t know.

Doesn't work by cutting and pasting for me either. I wonder if it's because antipodean computers are not particularly forgiving for umlauts (mine's Aussie)

Martin, I think I see the problem ... HTML being an international language, it has problems with language-specific accents (specifically the ö mit umlaut).

This link should work in English-language browsers, using a bit of cryptic coding to replace the ö. If you like, I will be glad to edit it into your original post, but first, please check and see whether a German browser can translate it:

I'm Swiss, a couple of generations removed -- while the traditions did not come down in my family I've been to Switzerland a few times and learned what I could. And I know that Rösti (ROOOSH-ty) potatoes are a dish that says "home" to the Swiss. And that they are delicious, thank you for the lesson.

There are similar dishes, I suppose that more often I have made the "gallette des pommes" from Julia Child's cookbooks. Quite similar but it doesn't generally come out as dark as yours when I make it.

My Jewish neighbors make latkes which also are quite similar, but generally smaller.

The other Ur-schweizer dishes that come to mind involve melted cheese. Swiss fondue on the one hand, and raclette on the other. Putting it that way makes me want to lick my fingers...

You´re Swiss, Frank! I always thought you have a kind of austrian background. In this case, here is an easy-version of the swiss classic Fondue. And served with "Gschwellte", swiss word for potatoes.

Hi Martin

The name "Deis" is mostly in southern Germany and the German speaking part of Switzerland. I have my great grandfather's Heimatschein from a town in Kt. Aargau, which is where most Swiss Deis-Deiss families trace back to. Citizenship goes by town in Switzerland. On my mother's side I have family from the region of Ulm, and the region of Bremen. Plus lots of Brits on both sides, typical for Americans I suppose. We're all over the place. Nothing Austrian though.

It is interesting that you serve fondue on potatoes. If I just looked at the pictures I would be sure that you were describing raclette instead. As fondue is understood here in the states you use long forks and dip pieces of bread into the "soup." I've never seen it served that way. But I know that raclette is routinely scraped off, melted, onto potatoes for serving.

I'll have to try both of these recipes some time.

As I said it is an easy-version of fondue and besides potatoes , of course you could also use bread which would be classic.
