RCP: Pasta with Pumpkinseed Pesto

Ingredients (serves 2):
300g pasta
100g pumpkinseed
100g parmesan
100-150ml olive oil
1 organic lemon (peel and a dash juice)
1 bunch parsley
1 clove of garlic

Toasted pumpkin seeds are delicious. I have used them to make mole but never tried them in pesto. I'll be sure to give this recipe a try soon.

Dave,

you will found out that it is a very delicious variation of the boring classic pesto. The mix of pumpkinseeds, parsley and lemonpeel is such spring-like and sublime.

Boring? Classic? Isn't that an oxymoron? Either way, I have to disagree with you in that classic pesto is boring. I love the stuff. Granted, I'm not knockin' your recipe here, Martin; it sounds delicious and I can't wait to try it (though I usually associate pumpkin seeds with autumn). I just don't think that basil pesto is "boring". It holds it's place at the table very well.

Traditional pesto is not boring, if you do it right.

(Non-traditional pesti aren't boring, either.)

Yes, Yes, Yes, the classic pesto is not boring! I don´t want to give it a negative touch, of course not. It is boring in a certain way, as everybody makes it and most of the people buys them in the supermarket in a cheap version.

No doubt, homemade pesto with a good basil is fantastic.........

What an interesting use for pumpkin seeds (or 'pepitas', as I call them, the Mexican name I first knew them by). Just bought a new bag last weekend, I'll have to try this soon, too.
