Interesting, but not very practical when you're cooking 50 of them on the grill for a backyard picnic. BYW - cooking burgers over hardwood charcoal is perfection.

I read and went away, but something just bothers me about that hamburger odyssey. There must be something fundamentally wrong about making such a fuss over a hamburger. Maybe there's something fundamentally wrong with me, but I just don't see making all that fuss over a hamburger or a hot dog. I think it's a perversion of the whole idea!
And I got it off my chest and I don't even feel better about it. :?

I am not a big fan of molecular gastronomy, but an ex-chef friend of mine swears by HB's roast beef preparation: sear outside of roast with blowtorch, then slow cook in oven at 55°C (131°F) for 20 hours. That has as its appeal also the simplicity of its preparation, provided you have an oven that can be set to such a low temperature.

And unless the roast was impeccably clean to start with, it sounds to me like an invitation to food poisoning.


Regarding the Blumenthal-burger: No matter how short or long you cook it, a hamburger prepared this way will be overdone.

I prefer to use recipes like this as triggers to make me thing about how I prepare a dish and what could be improved rather than as a recipe to be followed.

I am unlikely to invest 30 hours into producing some burgers, but if I learn something that will improve the way I make burgers, I am happy.
