RCP: Taco Seasoning (for Howie)

This eliminates the high levels of salt and sugar found in commercial preparations.

Normal People Version

2 tbsp chili powder
2 tbsp ground cumin
1 1/2 tbsp paprika
1 tbsp onion powder
1 1/2 tbsp garlic powder
1/4 - 1/2 tsp ground cayenne pepper

Mix together well. Use 2 tbsp per 1 pound of meat.


Chilehead Version

2 tbsp smoked red savina or chipotle powder (I use Jim Campbell's great products... no financial interest)
2 tbsp ground cumin
1 1/2 tbsp hot smoked paprika
1 tbsp onion powder
1 1/2 tbsp garlic powder
1/2 tsp ground cayenne pepper
1/2 tsp ground chile de arbol

Mix together well. Use 2 tbsp per 1 pound of meat.

This sounds perfect. I love my red savina....that is the version I will try.

I made the "Normal People" version tonight with two substitutions. I didn't have any onion powder, so I fried up onions in the ground beef and I didn't have chili powder, so I substituted Cajun Seasoning, which worked quite well with the cumin, which I think is vital. Good tacos, topped with NY State sharp cheddar, garden fresh tomatoes, lettuce and salsa.

Just a bump here - I made the "Normal" version last night for a BCS game party - great recipe! The January tomatoes sucked, of course.
