What's a good wine...

...to have with grilled chicken saltimbocca? The flavors of the prosciutto and sage are sort of throwing me off.

Try a Friuli/Slovenian Sauvignon or Friulano Bianco. The savory element is just about perfect.

Good suggestion, Hoke. But if he's leaning toward red, a lighter dry red like sangiovese or a southern Rhone blend would also be great choices.

A good Tavel would work well, but my best suggestion would be to find a nice Grignolino from Piemonte if you can!

Jenise, totally there with you. I drink Chianti with chicken saltimbocca, we make it fairly often. Yes, there's the chicken BUT that prosciutto has a lot of flavor...

Try one of the Frappatos from Occhipinti, fits the bill IMHO.

Of the red suggestions, I'd go with Lou's Frappato Occhipinti. Hard to imagine a dish that wouldn't go with that wine.

I still think the Friulano/SB would be the best choice to bring out the saltimbocca, with the wine affinity with sage.

Chicken goes with every just about every wine on the planet, doesn't it? I was thinking in terms of something that would play to the sage element and medium body, as it's a medium-bodied kind of dish.

OK - I'm going with a few bottles of a Friulano Bianco and a few of a southern Rhone blend. We'll eat indoors since it is so hot out and I'll put the Rhone in the fridge for 10 to 15 minutes whereas the Bianco's already there.
I appreciate all the suggestions.
