I'm sure of it. My link reminded me of that but I don't remember who it was offhand.

I was intrigued by the ants. Let's just say that it's not intuitive that they'd add much of substance to a dish like beef tartare, but it's NOMA. I would love to try that.

I had many of the same dishes pictured. We had lunch on the last day of service before their summer holiday. I suspect they were trying to clean out their freezer supply of ants because we had both ant dishes shown in the review. We were told that they "hibernate" in the freezer and when thawed revive and begin crawling. They are somehow pasteurized and then cooked. Crunchy with a slight lemony taste they glistened on the surface of the tartare and the zucchini [ not cucumber in our case] looking like large grinds of pepper prepped for a magazine photo shoot. They were much better as a condiment for the tartare and totally lost on the charred zucchini. The frozen scallop fudge with bee larvae was the most weird dish of the 21. Not a redeeming thing about it other than the lovely frozen stoneware ramekin it was served in.
One ant dish would have been sufficient. Likewise with other repeats on a theme of 'ingredients composee surrounded by a complicated sauce" The cured egg was quite interesting. What was striking was that the texture was a dense and fudgelike uniform consistency from edge to center. Not sure how that was done other than very low temp, long time. Alone, the taste was quite bland.

By the way, thanks Fred. I did not take any pictures whatsoever when we were there. I was nonplussed at how many people did however. Nearly all in fact. It should have been an omen.
