Soft scrambled eggs with garlic-scented sauteed baby spinach and Parmigiano-Reggiano. Made with organic butter and local free-range eggs to keep the hormones, antibiotics and cruelty out ... ;)

Looks great. That's my kind of breakfast.

I've gotten into the practice of simmering green and yellow beans, or asparagus, or whatever in a little water in a small nonstick. Then when done to my taste I'll add butter or olive oil and break a couple of eggs in then scramble. Sometimes with whole grain toast and sometimes into a breakfast burrito with avocado and/or beans and cheese.

I"ve got to have my good breakfast. Or, more likely, brunch.
