Pickling has begun

I was out of pickled brussel sprouts. I processed 8 lbs last week and am doing 10 more pounds tomorrow. It is the one instance that I don't want to use local produce. The local sprouts, when in season later in the year,just aren't tight enough for a good pickled product.

On the local vegetable market scene I think everything will be about a month late. The late frosts, snowfalls and excessive rain delayed starting the whole process.
