Joh. Jos. Prüm 1994 Graacher Himmelreich (Mosel) Riesling Kabinett ($11.95) Very pale straw color. Pleasant Riesling aroma, apples and pine and just a hint of "petrol." Delicious flavor, light fresh-fruit sweetness laced up with steely, green-apple acidity, exactly like biting into a ripe Granny Smith apple. Light alcohol (8%) makes it an easy quaff, but it's good enough to sit and contemplate ... and a fine value. U.S. importer: Willett Distributing Inc., Alexandria, Ky. (Feb. 9, 1998) FOOD MATCH: Very good with a simple stir-fry of pork tenderloin and spinach in a black-bean sauce.
