Chateau de Maligny 1996 Chablis Premier Cru Fourchaume ($18.99)Upholding early reports that the 1996 vintage in Chablis is outstanding, this excellent white Burgundy offers very stylish drinking indeed. Pale greenish-gold in color, it has a remarkably forward and appetizing aroma of ripe apples and delicious herbal notes. Full-bodied, clean and crisp, ripe apple fruit flavors are so exuberant that the wine almost seems sweet, but there's plenty of characteristic steely Chablis acidity to keep it in balance. FOOD MATCH: Very good with grilled swordfish; rich food and a rich yet acidic wine make a fine "like-with-like" combination.
